Ingredients:
- 1 medium cauliflower, chopped
- 2 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish optional
Instructions:
In a slow cooker, combine cauliflower, potatoes, onion, garlic, and vegetable broth
Cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender
Using an immersion blender, blend the soup until smooth
Stir in heavy cream and season with salt and pepper
Cook for an additional 10-15 minutes on low
