Creamy Cauliflower & Potato Soup

Enjoy a bowl of creamy cauliflower and potato soup that will make you feel better. This recipe for a slow cooker is simple to make and great for cold days.

Ingredients:

  • 1 medium cauliflower, chopped
  • 2 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish optional

Instructions:

In a slow cooker, combine cauliflower, potatoes, onion, garlic, and vegetable broth

Cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender

Using an immersion blender, blend the soup until smooth

Stir in heavy cream and season with salt and pepper

Cook for an additional 10-15 minutes on low

Serve hot, garnished with chopped parsley if desired
