Ingredients:
- 2 cups leftover mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped chives
- 2 eggs
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- Salt and pepper to taste
- Cooking spray or oil for waffle iron
Instructions:
Follow the directions that came with your waffle iron to heat it up
Put mashed potatoes, cheddar cheese, chives, eggs, flour, baking powder, salt, and pepper in a large bowl
Mix well until everything is well mixed
Spray or oil the waffle iron with a little cooking spray
Spread the mashed potato mixture out evenly on a waffle iron that has already been heated
The waffles should be cooked for about 5 to 7 minutes, or until they are golden brown and crispy
Carefully take the waffles out of the iron and do it again with the rest of the mashed potato mixture
Top the hot mashed potato waffles with your favorite things, like sour cream, bacon bits, or more cheese
