Ingredients:

- 5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup full-fat coconut milk
- 1 cup diced tomatoes canned or fresh
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of fresh ginger, minced
- 1 tablespoon ghee or coconut oil
- 2 tablespoons Paleo-friendly tikka masala spice blend
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions:
Set your Instant Pot to Saute mode and add the ghee or coconut oil
Add the chopped onions and saut until they turn translucent, about 3-4 minutes
Stir in the minced garlic and ginger, cooking for an additional minute until fragrant
Add the chicken pieces and brown them on all sides for about 3-4 minutes
Sprinkle the tikka masala spice blend, paprika, ground cumin, ground coriander, turmeric, salt, and pepper over the chicken
Stir well to coat the chicken evenly with the spices
Pour in the coconut milk and diced tomatoes
Stir to combine all the ingredients
Close the Instant Pot lid and set it to Pressure Cook mode
Cook on high pressure for 10 minutes
Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes, then manually release any remaining pressure
Open the Instant Pot, give the chicken tikka masala a good stir, and taste for seasoning, adjusting salt and pepper as needed
Serve the Paleo Chicken Tikka Masala hot, garnished with fresh cilantro leaves
