Ingredients:
- 2 Portobello mushroom caps
- 1 cup chopped kale
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 1 egg
- Salt and pepper to taste
- 4 whole wheat burger buns
- 4 slices Swiss cheese
- Lettuce leaves
- Tomato slices
- Mayonnaise and mustard for dressing
Instructions:
Remove stems from Portobello mushrooms and scrape out the gills using a spoon
In a bowl, combine chopped kale, breadcrumbs, Parmesan cheese, red onion, garlic, egg, salt, and pepper
Divide the mixture into four portions and stuff each Portobello cap with the mixture
Preheat grill or stovetop griddle over medium-high heat and grill the stuffed mushrooms for about 5-7 minutes on each side until cooked through
During the last minute of grilling, add a slice of Swiss cheese on top of each mushroom cap and allow it to melt
Toast the whole wheat burger buns on the grill until they are lightly browned
Assemble the burgers by placing lettuce leaves and tomato slices on the bottom bun, then add the stuffed Portobello mushroom with melted cheese
Spread mayonnaise and mustard on the top bun, then place it on top of the mushroom to complete the burger
Serve hot with your favorite side dishes
