These vegan jackfruit tacos are bursting with flavor and texture. The charred jackfruit mimics the taste and texture of meat, while the tangy cabbage and lime creme add brightness and creaminess to each bite. Perfect for a quick and delicious weeknight dinner or for entertaining guests
Ingredients:
- 2 cans young green jackfruit, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 small head of purple cabbage, thinly sliced
- 1 lime, juiced
- 1/4 cup vegan mayonnaise
- 1 tablespoon chopped fresh cilantro
- 8 small corn tortillas, warmed
- Optional toppings: diced tomatoes, avocado slices, hot sauce
Instructions:
Preheat a skillet over medium-high heat
In a bowl, toss jackfruit with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper
Add jackfruit to the skillet and cook until charred, about 5-7 minutes
In another bowl, mix thinly sliced cabbage with lime juice, vegan mayonnaise, and chopped cilantro
Assemble tacos by filling warmed tortillas with charred jackfruit and cabbage mixture
Add optional toppings if desired
