Gluten-Free Keto Cucumber Sandwiches

For kids, these gluten-free keto cucumber sandwiches are a cool and healthy snack. They taste great and are full of creamy goodness. Its like having a treat without the guilt.

Ingredients:

  • 2 large cucumbers, sliced thinly lengthwise
  • 1/2 cup cream cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Sliced turkey or chicken optional
  • Sliced cheese optional

Instructions:

In a bowl, mix cream cheese, mayonnaise, dill, lemon juice, salt, and pepper until well combined

Place cucumber slices on a paper towel and pat dry to remove excess moisture

Spread a thin layer of the cream cheese mixture onto one side of each cucumber slice

If desired, layer with sliced turkey or chicken and cheese

Top with another cucumber slice to form a sandwich

Repeat with remaining cucumber slices and filling

Secure each sandwich with a toothpick if necessary

Serve chilled and enjoy
