Instant Pot Minestrone Soup

A quick and hearty minestrone soup made effortlessly in the Instant Pot. Packed with a variety of vegetables, beans, and pasta, this comforting soup is perfect for a wholesome meal.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 1 can 14 oz diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • 1 cup small pasta
  • Grated Parmesan cheese for serving

Instructions:

Warm up the olive oil in the Instant Pot while it is in Saute mode

Chopped onion, carrots, celery, and garlic should be added

Cook the vegetables until they get soft

Zesty green beans, kidney beans, cannellini beans, diced tomatoes, vegetable broth, oregano, basil, thyme, salt, and pepper should all be added now

Set the lid of the Instant Pot to the Sealing position and close it

Cook for 5 minutes on Manual or Pressure Cook mode

Do a quick pressure release after cooking is done

Open the lid slowly

Add chopped spinach and pasta to the bowl

Once more, put the lid back on and wait 5 minutes

This will let the pasta cook in the residual heat

Grate some Parmesan cheese on top and serve hot
