Ingredients:
- 1 cup cookie butter
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup salted caramel sauce
- 1 cup powdered sugar
- 1-2 tablespoons milk
- Flaky sea salt, for garnish
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, cream together the cookie butter, granulated sugar, and softened butter until smooth and creamy
Add the egg and mix well
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms
Scoop tablespoon-sized portions of dough and roll them into balls
Place them on the prepared baking sheet, leaving space between each
Use a fork to flatten each cookie ball slightly and create a crisscross pattern
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
For the salted caramel filling, mix the salted caramel sauce and powdered sugar until smooth
Add milk as needed to achieve a spreadable consistency
Spread a generous amount of the salted caramel filling onto the bottom side of one cookie and top it with another cookie to create a sandwich
Sprinkle a pinch of flaky sea salt on the caramel filling before placing the top cookie
Repeat with the remaining cookies and filling
Allow the cookie sandwiches to set for about 30 minutes before serving
