Ultra-Moist Chocolate Buttermilk Cupcakes with Strawberry Cream Frosting

Savor the decadent strawberry cream frosting on top of these buttermilk cupcakes with a rich, moist chocolate flavor. Ideal for any special event or anytime you want something rich and decadent.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup boiling water
  • 1 cup fresh strawberries, pureed
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries for decoration

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with cupcake liners

In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt

Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients

Mix until well combined

Gradually stir in the boiling water until the batter is smooth

Be careful as the batter will be thin

Pour the batter evenly into the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean

Remove the cupcakes from the oven and let them cool in the pan for 10 minutes before transferring them to a wire rack to cool completely

In a separate mixing bowl, beat together the softened butter, powdered sugar, and vanilla extract until creamy and smooth

Add the pureed strawberries to the frosting and mix until well incorporated

Once the cupcakes are completely cool, frost them with the strawberry cream frosting

Garnish each cupcake with a fresh strawberry

Serve and enjoy
